At this time of year, Farmers’ Markets are heaven for fruit lovers like myself. I don’t have the luxury of being able to pluck fresh fruit from a backyard (yay for San Francisco apartment living!), so I relish in the fact that I have a Farmer’s Market only a couple blocks away from my place. That’s what spurred my search for perfect fruity summer desserts, especially since I don’t like settling for store-bought ice cream — I like my desserts homemade with tons of fruit. If you’re like me, these recipes will have you smacking your lips in no time.
In this Cornmeal Lemon Cake with Strawberries and Mint, the sweetness of strawberries is wonderfully complemented with the savory cornmeal, tart lemon and refreshing mint. It’s definitely a winner in our book! Recipe via blue kitchen.
Reminiscent of the cold mango dessert drink popular in Hong Kong, this “creamy, fruity, velvety, chewy, fluffy” dessert is right up our alley. The Mango Coconut Parfait is perfect for a dinner party as a palate cleanser. Recipe via Dessert First Girl.
What’s better than biting into a ripe peach? How about one that’s been marinating in wine, honey and vanilla bean. You’ll want seconds of these Peaches Soaked in Vanilla. Recipe via Seven Spoons.
This Raspberry Shortbread Fool is AH-mazing! There’s a lovely, buttery shortbread bottom, topped with a creamy raspberry filling. Recipe via Bake or Break.
This super easy recipe for Simple Apricot Tarts would be worth it even if it took hours! It calls for pre-made puff pastry, which cuts down on a lot of time (which means you’ll be biting into these babies in no time)! Recipe via Once Upon a Cakestand.
A picture says a thousand words … but we can only think up of three when it comes to these Wild Blueberry Cheesecake Ice Cream Sandwiches: Oh. My. Goodness. These rich morsels of goodness are made of from-scratch graham cracker cookies with blueberry “swirl,” and lemon cheesecake ice cream. (Note: This recipe does require an ice cream maker. If you can’t get your hands on one, like us, then feel free to substitute with a lemon or cheesecake flavored ice cream.) Recipe via Bittersweet Blog.
