This recipe is quick, healthy and super simple to make. You can be digging in and enjoying dinner with the fam in 15 minutes flat. You can substitute the chicken for another protein, like shrimp (which you can be precooked at the market) or diced hardboiled eggs.
Recipe serves 2.
1 package of store-bought udon noodles (found at most groceries stores in the Asian aisle)
1 cup of chicken broth
1/3 cup of water
Slices of rotisserie chicken (or other protein option)
Slivers of scallions
Salt and pepper to taste
1. In a medium pot, bring chicken broth and water to a boil. Add in udon noodles and cook for 10 to 15 minutes or until noodles are soft, but still a bit firm.
2. Sprinkle with salt and pepper to taste. Top with chicken and scallions.
